Description
Palacio de los Olivos makes its oils in Almagro, in the plains of Castilla-La Mancha, under the motto Olivos de tierra y sol (olives of earth and sun). This is the extra virgin olive oil (AOVE) in its Gourmet range, made from Picual olives, and sold in a 1.5 L gift case (estuche).
Picual is Spain’s most planted olive and the one that gives the boldest oils. This one pours deep green and smells of freshly cut grass, green tomato leaf and artichoke. On the palate it is robust: a clear bitterness, a peppery tickle at the back of the throat and a long, clean finish. These are signs of freshness and character, not defects.
Use it where you want the oil to speak: over grilled meats and vegetables, on tomato toast, in gazpacho and salmorejo, on lentils and beans, or drizzled over a bowl of white bean soup. Picual is also stable in the pan, so it is good for sautéing and roasting. The estuche presentation makes it a ready-to-give gift for cooks and food lovers.
Storage. Keep the oil sealed, in a cool, dark place away from the stove and sunlight. Use within a few months of opening for the best aroma.
Pairing. Pairs with Jamón Serrano and Ibérico, aged Manchego, ripe tomato, grilled bread and red meats.
