What makes jamón ibérico de bellota different
Jamón ibérico de bellota comes from Iberian pigs that spend their last months in the dehesa (the oak pasture of southwest Spain) eating acorns and grass during the montanera. Fat from the acorns is what gives the slice its sweet, nutty taste and the way it melts at room temperature. "100% ibérico" means both parents are purebred Iberian; hams and shoulders of that grade carry the black seal under Spain's Real Decreto 4/2014, and the same rule reserves the term pata negra for them. The legal minimum cure for any Ibérico ham of 7 kg (15.4 lb) or more is 730 days, about 24 months. Prices below are as of October 2026.
Choosing a piece
| Piece | Weight | Price | Approx. per lb |
|---|---|---|---|
| Beher Gold Label shoulder | 9–10 lb | $499 | $50–$55 |
| Cinco Jotas shoulder | 9–11 lb | $749 | $68–$83 |
| Beher whole leg | 15–17 lb | $1,095 | $64–$73 |
| Cinco Jotas whole leg | 12.5–13 lb | $1,395 | $107–$112 |
| Cinco Jotas whole leg | 14–15.5 lb | $1,449 | $93–$104 |
| Cinco Jotas whole leg | 16–17 lb | $1,695 | $100–$106 |
Both shoulders cure for 24 months or more, the Beher leg for 36 months or more and the Cinco Jotas legs for three years or more. A shoulder (paleta) is smaller, a little more intense and the lowest price of entry. A whole ham gives more lean, long slices. Per-pound figures shift with the exact weight of the piece you receive.
Buying a whole leg of jamón ibérico de bellota
Every piece here is a whole, bone-in leg: the jamón (hind leg) or the paleta (front leg). That is how jamón ibérico is cured and served in Spain, carved by hand from the bone into thin slices, each with a little fat. To carve a jamón ibérico leg at home you need a ham stand, a long, flexible knife and a cool, dry spot; serve the slices at 68-72 °F (20-22 °C). Once started, finish a whole Ibérico ham leg or shoulder within 3 to 6 weeks, keeping the cut face covered with baking paper and a clean cotton cloth. For a set that arrives with the stand and the knife, see the Cinco Jotas Grand Ham Box and our gift sets.
How much does jamón ibérico de bellota cost?
Here a whole leg of jamón ibérico de bellota costs $1,095 to $1,695 and a shoulder $499 to $749, about $50 to $112 per pound of piece. Every piece is 100% Ibérico, so the price follows the brand and its cellars, the length of the cure and the size. Roughly half of a leg's weight is meat you carve (a little less on a shoulder), so a pound of carved ham costs about twice the per-pound price of the piece. Even so, the whole leg is the cheaper way to buy: a Cinco Jotas leg comes to roughly $190 to $225 per pound of carved jamón, while our hand-carved Cinco Jotas slices work out to about $346 per pound.
Whole Ibérico hams and paletas ship free to the lower 48 states; orders of $500 or more ship with adult signature required.
