Manchego and Spanish cheese, ready for your board
Spanish cheese is not one style. Manchego, the firm, nutty sheep's milk cheese of La Mancha, sits next to the tangy goat cheese of the Canary Islands. Here are the Spanish cheeses we stock today, with prices as of October 2026.
Our core is Manchego DOP from Vega Mancha. The 3-month wedge (1 lb, $27.95) is mild, buttery and milky. The 6-month wedge (1 lb, $31.95) is firmer, with a nuttier flavor and a longer finish. For a crowd, the 3.5 lb wheels are $89.95 (3 months) and $99.00 (6 months). Not sure which to pick? Our Manchego cheese guide explains the ages, the DOP seal, how to cut it and what to pair it with.
Beyond Manchego:
- Maxorata Majorero goat cheese, semi-cured, from Fuerteventura, with a paprika-rubbed rind: a 7 oz wedge at $12.95 or a 2.2 lb wheel at $69.95.
- Vega Sotuélamos sheep's milk cheeses: a 6 oz truffled wedge at $15.95 and a trio of rosemary, cured and truffle cheeses at $39.95.
Shipping. Cheese travels refrigerated, so for now we deliver it to Florida addresses only, until our cold-chain packaging is in place. Orders of $250 or more ship free; otherwise the refrigerated flat rate is $24.95. See the shipping policy for details.
For a complete spread, add a whole leg from our Spanish ham collection or a bottle of Picual extra virgin olive oil.
FAQ
What is the difference between 3-month and 6-month Manchego?
The 3-month cheese is softer, milder and milky. The 6-month cheese is firmer and drier, with a nuttier taste. Choose 3 months for snacking and sandwiches, and 6 months for a cheese board.
Is Manchego made from sheep's milk?
Yes. Manchego with the DOP "Queso Manchego" is made only from the milk of Manchega sheep in La Mancha. Our Manchego guide covers the rules in more detail.
How should I store cheese after opening it?
Keep it in the refrigerator at 35-45 °F (2-7 °C), wrapped in wax or parchment paper rather than tight plastic, and re-wrap it after each cut. Take it out 30-60 minutes before serving so the aroma and texture open up.
Can I eat the rind?
Manchego rind is not meant to be eaten. Keep it on while you work through the wedge, and cut it away from each slice.
