Description
A chorizo sarta is the classic horseshoe-shaped chorizo of Spain, a pork sausage seasoned with pimentón (Spanish paprika) and garlic and cured until firm. Goikoa’s picante muy suave version adds a very light heat to the usual sweetness, so it works for the whole table, including those who avoid spice.
Cut it and you will find a deep red, slightly coarse interior, with a smoky, garlicky aroma and a savory finish. The paprika is the star, with only a warm tingle of heat. The texture is firm yet juicy and the fat renders beautifully when cooked. It is a very versatile sausage: slice it for a board, fry it, or simmer it in stews.
How to serve. Slice into thick rounds and serve at room temperature, or sauté briefly in a pan until the edges crisp. Cook it in lentils, white beans or a Spanish potato stew, or simmer it in cider for a classic tapa.
Storage. Ships refrigerated. Keep in the fridge at 35-40 °F (2-4 °C), wrapped tightly once opened, and use within three weeks. The sausage can also be frozen.
Pairing. Young red wine, dry cider or cold beer. Serve with Manchego, olives and crusty bread.
