Description
Chorizo is Spain’s most famous sausage, and Goikoa makes it the traditional way: pork, pimentón (Spanish paprika) and garlic, cured until firm. These mini choricitos are the same flavor shrunk to snack size: small, plump bites that go straight from the bag to the plate.
They have the deep red color and savory, smoky taste of a good chorizo, with a firm chew and a little paprika oil that coats the fingers. They are cured and ready to eat, so there is nothing to cook, slice or peel. Keep a bag at the office, in the cooler for a picnic, or on the cheese board next to the Manchego.
How to serve. Eat them as they come, at room temperature. For a warm tapa, sauté them for a few minutes in a dry pan until the fat renders, then splash with a spoonful of cider or sherry. They are also excellent in lentils, scrambled eggs and pizza.
Storage. Ships refrigerated. Keep in the fridge at 35-40 °F (2-4 °C). Once opened, reseal the bag and eat within a week.
Pairing. Manchego, marcona almonds, green olives, and a cold beer, a dry cider or a young red wine.
