What is normal on a cured ham

A whole ham cures for months in natural cellars, so a few things are signs of a good cure, not damage:

  • Mold on the rind. A white or bluish bloom on the outside skin is normal. Wipe it off with a cloth and a little olive oil before you start carving.
  • Tiny white crystals in the meat. They are tyrosine, an amino acid that forms during long curing, typical of Ibérico ham. They are safe and a sign of age.
  • Fat that “sweats”. In a warm room the fat softens and shines; Ibérico fat is so rich in oleic acid that it melts close to room temperature. Keep the ham somewhere cool and it firms up again.

A 100% Ibérico ham from Guijuelo for someone special, with a full Spanish Christmas around it. In Spain, a jamón on its stand is the center of the Christmas table: it stays in the kitchen from Christmas Eve to Three Kings’ Day and everyone carves a few slices when friends drop by. This box brings the ham, the stand and the knife, and the turrón, cheese and chorizo that go around it.

How to serve. Set the ham on its stand, narrow end up, and carve thin slices with the long knife; Ibérico fat melts at room temperature, so serve the slices on a plate that is not cold. Manchego with a drizzle of the Picual, chorizo on the bias, olives in a bowl, turrón after dinner. Read our guide to carving a ham before you start.

Storage. Keep the ham in a cool, dry place, away from direct heat, and cover the cut face with baking paper and a clean cotton cloth between uses. Keep the cheese and charcuterie in the fridge once opened; turrón and olives in the pantry.
