Description
Lomo ibérico is the loin of the Ibérico pig, cured whole in a casing with salt, garlic and pimentón (Spanish paprika). It is the leanest of the Ibérico embutidos and one of the most refined. This lomo ibérico de bellota is from Cinco Jotas (5J), the Jabugo house, and made from 100% Ibérico pigs fed on acorns in the dehesa. It is one of the premier cured meats in Spain.
Slice it thin and you get a deep rosy-red face with delicate marbling of fat. The aroma is warm, of paprika and cellar. It is tender, savory, a little sweet and long on the palate, with much less fat than a ham and a more subtle presence than chorizo. It has the elegance of jamón in a form that is easy to slice at home on a board.
How to serve. Peel the casing, slice paper-thin with a sharp knife, and serve at room temperature for the best flavor. It is excellent on its own with bread and olive oil, or on a toast with fresh goat cheese, or in a bocadillo with tomato.
Storage. Ships refrigerated. Keep in the fridge at 35-40 °F (2-4 °C). Once cut, wrap tightly and consume within three to four weeks.
Pairing. Dry sherry (fino or amontillado), a young Rioja or a brut cava. Add Manchego and Marcona almonds.

FAQ
What is lomo ibérico?
Lomo ibérico is the cured loin of the Ibérico pig, seasoned with salt, garlic and pimentón. It is lean, tender and mild. In Spain its full name is caña de lomo ibérico, and it follows the same quality standard as Ibérico ham: de bellota, as here, means the pig finished on acorns.
Is it the same as jamón?
No. Jamón is the hind leg. Lomo is a leaner cut from the back, cured in a shorter time with spices.
Can I serve it with ham?
Yes. Lomo, chorizo and jamón together make a classic Spanish charcuterie board.
Does lomo ibérico need refrigeration?
Yes. Keep it in the fridge at 35-40 °F (2-4 °C) and take it out a little before serving: it tastes best at room temperature. For now it ships refrigerated to Florida addresses only.
