Description
Covap Alta Expresión is the premium Ibérico line of Covap, the farmers’ cooperative of the Valle de los Pedroches in Córdoba. This salchichón is the Spanish cousin of salami: Ibérico pork seasoned with pepper and cured until firm, without the paprika of chorizo. Made with 100% Ibérico pigs raised on acorns, it is one of the most elegant embutidos you can put on a board.
Cut a slice and you see small veins of white fat in rosy meat. The aroma is of peppercorn, cured pork and a little nut. On the tongue it is tender, savory and gently peppery, with a lingering sweetness from the acorn-fed fat. It is the sausage to serve to people who find chorizo too bold.
How to serve. Peel the casing, then slice thin and eat at room temperature. Combine it with Manchego, marcona almonds and cornichons on a board, or fold it into a baguette with butter.
Storage. Ships refrigerated. Keep in the fridge at 35-40 °F (2-4 °C). Take it out 15-20 minutes before serving. Once cut, wrap tightly in paper or foil and eat within three to four weeks.
Pairing. Dry fino or a light Rioja. Aged Manchego, olives and a few grapes finish the board.
