Description
Mazapán is Spain’s almond paste, a Christmas favorite and a staple of Spanish pastry shops, especially associated with Toledo and La Mancha. Dulymaz (Dulces y Mazapanes) makes it in Malagón, Ciudad Real: almonds and sugar shaped into small figures and toasted until the tops turn golden. Their Calidad Suprema marzipan is 46% almond, and the seal on the box says the almonds are 100% Spanish.
The flavor is pure almond: sweet, toasty and slightly caramelized on the surface, with a soft, dense interior that melts in the mouth. A single piece is rich and satisfying. Mazapán is one of the oldest Spanish sweets and one of the most loved.
How to serve. Serve at room temperature, as a small dessert with coffee or sweet wine. Offer a few pieces at the end of a meal, or add them to a holiday dessert board with turrón and chocolates.
Storage. Cool, dry place away from heat and sunlight. Once opened, wrap well or keep in an airtight container. Best eaten before the date on the package.
Pairing. Espresso, black tea, sweet sherry or a glass of cava.
