Description

Galicia’s rías are among the great mussel-growing waters of Europe, and the mussels that come out of them are plump, sweet and tasting of the sea. Paco Lafuente packs them in escabeche, the traditional Spanish marinade based on vinegar and oil, which has preserved fish and shellfish in Spain for centuries and gives each mussel a tangy, savory edge.

The mussels are tender and juicy, with the bright acidity of the escabeche cutting through their natural richness. It is one of those tins that is gone as soon as it reaches the table: nothing to cook, nothing to prepare, only bread to mop up the sauce.

How to serve. Serve at room temperature, straight from the tin or on a small plate with the escabeche spooned over. The classic Spanish aperitivo is with potato chips from a bag, a few olives and a cold drink. You can also toss the mussels through a salad of beans or potatoes, or put them on toasted bread with a little chopped onion.

Storage. Keep the unopened tin in a cool, dry pantry at room temperature. Once opened, transfer the contents to a covered glass container, refrigerate and eat within 2 days.

Pairing. Albariño, cava, vermouth over ice, or a very cold beer. Fresh bread is non-negotiable.
