Description
In Spain a good tin of sardines is not an emergency ration, it is a delicacy. Ramón Peña packs its sardinillas, the small sardines (Sardina pilchardus), in olive oil in a sober black tin, 20 to 25 pieces to the tin. Small fish mean small bones, a delicate texture and a mild flavor that suits people who think they do not like tinned fish.
Open the tin and the sardinillas lie in neat rows, silvery and glossy. The flesh is soft and tender, tastes clean and of the sea, and the olive oil carries it all the way to a gentle, savory finish. Because they are small, you can eat them whole, on a cracker or a slice of toast, without fuss.
This is the tin to start with if you are new to Spanish conservas, and the one to keep stocked if you are not. It is the easiest of the six tins in our Galician Tinned Fish Box.
How to serve. Open the tin and serve the sardinillas at room temperature, with their oil. Lay them on toasted bread rubbed with ripe tomato, on a slice of buttered bread with a squeeze of lemon, or alongside potato chips and olives. Spoon the leftover oil over boiled potatoes or a tomato salad.
Storage. Keep the unopened tin in a cool, dry pantry at room temperature. Once opened, transfer the contents with their oil to a covered glass container, refrigerate and eat within 2 days.
Pairing. A cold Albariño, dry fino sherry, vermouth over ice or a very cold beer. Add pickled peppers, good bread and a little extra virgin olive oil.

FAQ
What are sardinillas?
Sardinillas are small sardines. In this tin you get 20 to 25 pieces, which are tender and mild, and have small, soft bones that most people eat without noticing.
Do I need to refrigerate the tin?
No. The unopened tin is shelf-stable and keeps in a cool, dry pantry. Once opened, move the sardines and their oil to a covered glass container, refrigerate and eat within 2 days.
What is the best way to eat them?
Simply: on good bread with a squeeze of lemon or a little tomato, with a cold drink. They also work well in salads and pasta.
Can I buy several tins together?
Yes. The Galician Tinned Fish Box combines this tin with five other conservas at a lower price than buying them one by one.
