Description
A whole ham needs a stand. The ham stand holds the leg firmly at the right angle, so you can carve thin, even slices with a long knife and keep your hands safe. This folding model from Jamonprive is the one we put in our ham boxes: simple, solid and easy to put away once the ham is finished.
The base is made in Spain from Chilean pine, with non-slip pads underneath so it does not slide on the counter while you carve. The arms are steel with a bright chrome finish: one end cradles the shank, the other holds the ham at the bottom, and both fold down when you are done. It fits Spanish serrano and Ibérico hams and Italian prosciutto on the bone.
How to use it. Set the stand on a flat, stable surface. Place the ham narrow end up to start (the side with more meat), tighten the shank clamp, and carve with a long, flexible ham knife such as the Arcos Niza. When you reach the bone, turn the ham over.
Care. Wipe the base with a dry cloth. Clean the metal parts with a damp cloth and dry them well. Fold the stand and store it in a dry place.
