Description
Arcos, based in Albacete, is one of Spain’s oldest and best-known cutlery makers, and its knives are a fixture in Spanish kitchens. The Serie Profesional ham knife is for those who carve ham often, with a blade made for long, thin and even slices.
The professional series is a step up in finish and balance from entry-level knives, and it is the knife we recommend for Ibérico hams, where each slice deserves a clean cut. A long, flexible blade lets you follow the grain of the meat in one pass, so the fat stays attached to the lean and the slice stays whole.
How to use it. Secure the ham on a stable ham stand. Starting at the maza (the wider side), draw the knife toward you in a long, steady stroke, holding the blade nearly flat. Cut thin slices of about a millimeter and lift them off with the tip. Use a short knife to cut around the bone and to remove the rind and fat at the edges.
Care. Wash by hand with warm water and mild soap, dry immediately and store in a dry place. Do not put it in the dishwasher, and never use it to cut bone unless it is designed for it. Keep the edge true with a honing steel.
