Description
In Spain, nearly every home that buys a whole ham has one of these: a plain pine ham stand with a curved upright and a metal clamp at the top. It does one job, and it does it well. It holds the leg firmly and at a comfortable carving angle, so you can cut thin, even slices with a long ham knife and keep your hands safe.
The base is wide and flat, and the curved upright lifts the narrow end so the ham sits at the right angle for carving. The metal clamp tightens around the ankle with a screw. It is light, easy to put together and easy to put away when the ham is finished, which makes it the natural choice for a first ham or for a serrano you will enjoy over a few weeks.
How to use it. Place the stand on a flat, stable surface. Put the ham narrow end up to start, tighten the clamp around the ankle, and carve with a long, flexible knife such as the Arcos Niza. When you reach the bone, turn the ham over.
Care. Wipe the wood with a dry cloth. Do not soak it. Clean the clamp with a damp cloth and dry it well.
