Description
Palacios is one of the best-known chorizo houses in Spain, based in Alfaro, La Rioja. Their sarta dulce is the sweet version: a pork sausage seasoned with sweet paprika (pimentón dulce) and garlic, cured until firm and shaped into the classic horseshoe. There is no spice, only paprika flavor.
The sausage is deep red, rich in paprika and gently smoky, with a savory, slightly sweet finish. The texture is firm but not dry, and the fat is soft. It is a family-friendly chorizo that works as a tapa, a sandwich filling or the base of a stew. Because it has no heat, it is the one to give to people new to Spanish sausage.
How to serve. Slice thick and serve at room temperature on a board, or brown in a dry pan until the edges caramelize. Add to lentils, beans, paella or scrambled eggs, or simmer it in cider for a classic tapa.
Storage. Ships refrigerated. Keep in the fridge at 35-40 °F (2-4 °C), wrapped tightly once opened, and use within three weeks. The sausage can also be frozen.
Pairing. Rioja crianza, dry cider or beer. On the board add Manchego, olives and bread.
