Description
The navaja (razor clam) is one of the most prized shellfish in Spain, long and slim with a sweet, delicate meat. Alamar packs it al natural, in pieces (trozos de navaja), so that you can have it ready on the table without cleaning, steaming or going near a fish market.
The flavor is clean, sweet and briny, with a tender, slightly springy bite and a subtle taste of the sea. Because the razor clam is delicate, it is best served simply. Think of this tin as a luxury ingredient: it is the one you open when you want to impress.
How to serve. Open the tin, drain a little liquid and serve at room temperature. Dress the pieces with extra virgin olive oil, a squeeze of lemon and chopped parsley, or lay them on toasted bread. They are also excellent folded into a rice dish or a simple pasta with garlic and olive oil at the last moment.
Storage. Keep the unopened tin in a cool, dry pantry at room temperature. Once opened, transfer the contents to a covered glass container, refrigerate and eat within 2 days.
Pairing. Crisp Albariño, dry fino sherry or a brut cava.
