Description
White asparagus is grown under soil, without sunlight, so the spears stay pale, tender and mild. Navarra, along the Ebro river, is the region Spaniards associate with the best of them, and La Catedral de Navarra packs them whole in tall glass jars, peeled and cooked, in water with a little salt.
In Spain they are a classic starter and a staple of the Christmas table: served cold with mayonnaise or a vinaigrette, wrapped in jamón, or on a mixed salad.
How to serve. Drain carefully, so the tips do not break, and serve cold, three or four per person, with mayonnaise, a vinaigrette or good olive oil and salt.
Storage. Keep in the pantry. Once opened, keep in the fridge in their liquid and eat within 3 days.
