Beher jamón 100% ibérico de cebo de campo: Ibérico pigs raised outdoors, cured for years, at a fraction of bellota prices.
- 100% Ibérico, raised outdoors on pasture and feed
- Whole bone-in leg, 15-17 lb
- Ibérico flavor and fat without the bellota price
Safety: A whole ham or shoulder weighs 8-17 lb: lift it with both hands. Carving needs a very sharp knife, a stable stand and a cut-resistant glove. Remove the rind before carving and do not give the bone to your dog. How to carve safely.

What is normal on a cured ham
A whole ham cures for months in natural cellars, so a few things are signs of a good cure, not damage:
- Mold on the rind. A white or bluish bloom on the outside skin is normal. Wipe it off with a cloth and a little olive oil before you start carving.
- Tiny white crystals in the meat. They are tyrosine, an amino acid that forms during long curing, typical of Ibérico ham. They are safe and a sign of age.
- Fat that “sweats”. In a warm room the fat softens and shines; Ibérico fat is so rich in oleic acid that it melts close to room temperature. Keep the ham somewhere cool and it firms up again.

Description
Cebo de campo (green label) is the smart buy in Ibérico ham. The pigs are 100% Ibérico, raised outdoors with room to roam and fed on a mix of acorns, pasture and grain. They are not finished entirely on acorns, which is what separates them from bellota and what keeps the price within reach. The curing is just as serious: Beher is a four-generation family house, and its cebo de campo jamón is cured for three years or more.
The result has the character of Ibérico: deep red meat, generous fat that glistens, and an aroma of toasted nuts and warm cellar. Compared with bellota the flavor is a little more direct and savory, less sweet, and the texture is a touch firmer. For everyday carving, family celebrations or a restaurant bar, it is a ham that over-delivers.
How to serve. Mount it on a ham stand and carve thin, even slices with a flexible knife, keeping a little fat on each. Serve at 68-72 °F (20-22 °C). The fat is the flavor, so do not trim it away.
Storage. Keep the whole leg in a cool, dry, dark place. Once started, cover the cut face with baking paper and a clean cotton cloth, and finish it within 3 to 6 weeks.
Pairing. Fino sherry, dry rosé or a young Rioja are all natural partners. For bread, try pan con tomate; for cheese, a six-month Manchego.

FAQ
What is the difference between cebo de campo and bellota?

Is it 100% Ibérico?
Yes, this Beher ham is 100% Ibérico de cebo de campo.
How long does it last once cut?
Plan on 3 to 6 weeks in a cool place, with the cut face covered with baking paper and a clean cotton cloth.
