What is normal on a cured ham
A whole ham cures for months in natural cellars, so a few things are signs of a good cure, not damage:
- Mold on the rind. A white or bluish bloom on the outside skin is normal. Wipe it off with a cloth and a little olive oil before you start carving.
- Tiny white crystals in the meat. They are tyrosine, an amino acid that forms during long curing, typical of Ibérico ham. They are safe and a sign of age.
- Fat that “sweats”. In a warm room the fat softens and shines; Ibérico fat is so rich in oleic acid that it melts close to room temperature. Keep the ham somewhere cool and it firms up again.
Why $349 and not the $99 warehouse ham?
The $99 ham is fine if you just want a ham. Ours is $349 because it is not just the ham: a Reserva cured 15 months instead of 12, from a named producer (Cortijo de Canata), a real wooden stand and an Arcos Niza knife you will keep, everything shipped free in one box, and a Spaniard who answers the phone. If anything arrives damaged or wrong, we make it right.

Description
Never had a whole ham at home? This is where to start. In Spain, a jamón on its stand is part of the kitchen: you carve a few thin slices when friends come over, with a glass of something, and it lasts for weeks. This kit gives you the three things you need to do exactly that, and nothing you don’t.
What is in the kit
- Cortijo de Canata Jamón Serrano Reserva, whole bone-in leg, cured for 15 months, 15-17 lb
- Classic wooden ham stand (jamonero), pine, with a metal clamp
- Arcos Niza stainless steel ham knife: long, narrow and flexible, made for thin slices
Why serrano to start. A serrano reserva is the ham most Spaniards eat every day: savory, balanced, with a clean cured flavor and a price that lets you learn to carve without worrying about every slice. Once you have the stand and the knife, your next ham can be an Ibérico.
How to start carving. Set the stand on a flat surface and lock the ham in with the narrow end up. Remove a little of the outer rind and fat from the top with the knife, only where you are going to cut. Then carve thin, short slices, almost transparent, moving the knife away from you. Keep the cut flat and only cut what you will eat. Our guide to carving a ham walks you through it step by step.
Storage. Keep the ham in a cool, dry place, away from direct heat and sun. Between uses, cover the cut face with baking paper and a clean cotton cloth. Plan to finish it within 3 to 6 weeks once started.
Shipping. Ships free in one box in the contiguous US. Makes a great gift: add a message at checkout.
FAQ
I have never carved a ham. Is it difficult?
No. With a stand and a long, flexible knife, anyone can cut good slices after a few tries. Start slowly, keep the slices thin and short, and follow our carving guide.
How long does a whole ham last?
Once you start it, several weeks if you store it well and cover the cut face between uses. Many families finish one in 3 to 6 weeks.
Can I use the stand and knife for my next ham?
Yes. Both are made to last; for your next ham you only need the ham.
