A big, generous Jamón Serrano Reserva, cured 15 months and made for weekends of carving.

  • Cured 15 months: firm texture, clean salty-sweet flavor
  • Whole bone-in leg, 15-17 lb
  • The best value per pound in our whole-ham range

Safety: A whole ham or shoulder weighs 8-17 lb: lift it with both hands. Carving needs a very sharp knife, a stable stand and a cut-resistant glove. Remove the rind before carving and do not give the bone to your dog. How to carve safely.

What is normal on a cured ham

A whole ham cures for months in natural cellars, so a few things are signs of a good cure, not damage:

  • Mold on the rind. A white or bluish bloom on the outside skin is normal. Wipe it off with a cloth and a little olive oil before you start carving.
  • Tiny white crystals in the meat. They are tyrosine, an amino acid that forms during long curing, typical of Ibérico ham. They are safe and a sign of age.
  • Fat that “sweats”. In a warm room the fat softens and shines; Ibérico fat is so rich in oleic acid that it melts close to room temperature. Keep the ham somewhere cool and it firms up again.

Description

Jamón Serrano is Spain’s everyday ham, and the heart of any tapas table. Cortijo de Canata makes it from white-breed pigs and cures it for 15 months in dry-curing cellars, long enough to move it into the Reserva category. It is not Ibérico, and it does not try to be. It is a classic, savory ham with a firm bite and a salty-sweet finish that suits sandwiches as well as boards.

This 15-17 lb leg is the full-size version. Expect firm, pink-to-ruby slices with a thin edge of creamy fat, a gentle aroma of cured meat and a lasting savory flavor. Because Serrano is leaner than Ibérico, it carves cleanly into wide slices that stand up to bocadillos, melon, eggs and cooking.

How to serve. Set the ham on a ham stand and carve thin slices with a flexible knife. For tapas, serve at 68-72 °F (20-22 °C). Dice the bone-side meat and trimmings for lentils, croquetas, pan-seared green beans or a tortilla.

Storage. Store whole in a cool, dry place. Once cut, cover the cut face with baking paper and a clean cotton cloth, and finish it within 3 to 6 weeks. Bones make an excellent broth.

Pairing. Crisp young whites, dry cava or a light Rioja, plus Manchego, olives and bread with tomato and olive oil.

Shipping. Free in the contiguous US. Ships from Florida in 1-2 business days.

FAQ

What is the difference between Serrano and Ibérico ham?

Serrano comes from white-breed pigs and cures in about a year or more; Ibérico comes from Ibérico pigs, is fattier and cures for longer. Serrano is firmer, saltier and cheaper.

How long does it last once I start cutting?

3 to 6 weeks in a cool place when the cut face is covered. Slice only as much as you will eat.

Do I need a ham stand and knife?

Yes. A ham stand and a long, flexible knife will let you carve thin, even slices. Add a stand and a knife below.
